Apple cake with lemon zest and vanilla
January’s weather, with all its cold wind, rain and short daylight, presents a real challenge to stay focused on those New Year resolutions.
My favourite means of wishing away the winter blues is to eat a slice of my mum’s lemon zest and vanilla apple pie.

There is nothing more comforting than a cake made with light fragrant batter and the sweet tartness of Braeburn apple.
This apple cake is totally delicious and rarely is one slice not followed by, shall I say, a smaller one. It’s delicious at room temperature and even more so slightly warmer with fresh custard or even a scoop of vanilla ice-cream.
I am not the only one under the spell of our apple cake as over the years it has proven to be the most popular amongst Del Sole customers.
Occasionally I might change some of the ingredients for variety and use cinnamon instead of vanilla. However, the results are always as enticing as before.
Our apple cake also presents itself very well and this is another reason why customers choose to have one made for parties.
NB - We only require 24 hours notice to prepare a fresh one to be collected from our shop.
